GRILLED TUNA SANTA FE
.....a great tuna steak recipe to try ! Nice !

INGREDIENTS
  • 1/2 c. fresh lime juice
  • 1/2 c. beer
  • 4 tsp. cumin
  • 1/2 tsp. salt
  • Fresh tuna fillets or steaks for each person
  • Sliced avocado, salsa (optional)
  • 4 cloves garlic, minced
  • 3 tbsp. oil
  • 4 tsp. Dijon mustard

INSTRUCTIONS
Combine lime juice, beer, oil, cumin, mustard, salt and garlic in a large shallow dish. Marinate for 2 hours, turning occasionally. Grill on preheated BBQ, approximately 5 minutes each side. Serve
with salsa and a slice of avocado, if desired. The fresh tuna steak recipe is ready to serve....hmmm...amazing ! Enjoy it

GRILLED TUNA NICOISE ..an amazing fresh tuna steak recipe to try ....a great one !

INGREDIENTS
TUNA & MARINADE:
  • 4 fresh tuna steaks (about 4 oz. each), 1 inch thick
  • 1/4 c. extra virgin olive oil
  • 2 tbsp. red wine vinegar
  • 2 tbsp. chopped fresh rosemary
  • 1 tbsp. minced garlic
  • 1/4 tsp. coarsely ground black pepper
  • Salt to taste
GARNISH:
  • 1 tbsp. chopped parsley
  • 1/8 c. black nicoise olives

INSTRUCTIONS
Mix tuna-marinade ingredients in a bowl. Place tuna steaks in one layer in a shallow glass dish; coat with the marinade. Refrigerate, covered, for 1 hour, turning fish twice. Grease grill with cooking spray. Remove tuna from marinade, scraping of bits that cling; place in center of grill over medium-hot coals.
Grill for 10 minutes, turning tuna only once during cooking. Fish should be slightly pink inside. Arrange fish on a platter and serve with your favorite green-bean salad. OVEN-BAKED FRESH TUNA WITH ARTICHOKES

INGREDIENTS
  • 6 lg. marinated artichoke hearts
  • 1 egg, beaten
  • 1/4 c. olive oil
  • 6 tuna steaks
  • 2 tbsp. dry bread crumbs
  • 1 tbsp. parsley, finely chopped
  • 1 garlic clove, minced
  • Salt to taste

INSTRUCTIONS
Rinse tuna steaks and pat dry. Dip steaks in beaten egg and bread crumbs. Saute steaks in olive oil and garlic until brown.Place steaks in ovenproof dish. Drizzle some of the marinade over steaks. Seal dish with foil. Bake 20 minutes at 350 degrees. Garnish with parsley. The fresh tuna steak recipe with artichokes is ready...enjoy your feast ! Nice one!

LEMON-BASTED FISH TUNA STEAKS RECIPE....

INGREDIENTS
  • 1/4 c. lemon juice
  • 1/2 c. olive oil
  • 1 sm. clove minced garlic
  • Pinch of crushed oregano leaves
  • 1/2 tsp. finely grated lemon peel
  • Salt and freshly ground pepper
  • 4 fish steaks (tuna, swordfish, or bluefish), 1 inch thick

INSTRUCTIONS
Combine the lemon juice, olive oil, garlic, oregano, lemon peel, salt, and pepper. Pour over the fish tuna steaks and let stand while preheating the grill (about 30 minutes). Grill 5 minutes per side. The fresh tuna steak recipe is ready to serve...enjoy it ! Nice !

INGREDIENTS
  • 4 (3/4 inch) tuna steaks
  • 1 c. Italian salad dressing
  • 2 tsp. ground pepper
  • 1 lemon, quartered

INSTRUCTIONS
Place tuna steaks in a 2 inch dish. Pour salad dressing over tuna. Refrigerate for an hour, turning once. Remove tuna steaks and sprinkle pepper on both sides.
Grill, over medium coals until tuna steak flakes easily when tested with a fork. (About 5 minutes on each side.) After removing from grill, squeeze a lemon wedge over each steak. The fresh tuna steak recipe is ready to serve....enjoy it !

GRILLED TUNA STEAK WITH ORANGE BUTTER

GRILLED TUNA STEAK WITH ORANGE BUTTER ...a nice fresh tuna steak recipe to try !
INGREDIENTS
  • 6 tbsp. (3/4 stick) unsalted butter, room temperature
  • Zest and juice of 1 orange
  • 1 tbsp. parsley or savory, chopped (fresh, if available)
  • 1 1/2 lbs. fresh tuna, cut into 3/4 inch thick steaks
INSTRUCTIONS
In a small bowl, beat the softened butter with the orange zest. Beating constantly, slowly add the orange juice. Stir in the parsley or savory and set aside. Place the tuna on a grill over hot coals.
Spray grill with vegetable oil to prevent sticking. Grill 5 minutes on each side or to desired degree of doneness, brushing with some of the orange butter while grilling. Remove the steaks from the grill and season to taste. Serve hot with remaining orange butter and the wedges. he The fresh tuna steak recipe is ready to serves 4 persons.

GRILLED TUNA WITH CRAWFISH SAUCE

INGREDIENTS
  • 4 (3/4 inch) fresh tuna steaks
  • 1 (8 oz.) bottle Italian dressing
  • 1/4 c. Worcestershire sauce

Marinate tuna steaks in Italian dressing and Worcestershire sauce 1 to 2 hours. Grill on Bar-B-Q pit 15 to 20 minutes on each side. Fish will flake when done. Serve with crawfish sauce on top.

CRAWFISH SAUCE:
  • 1 bunch green onions
  • 1 stick butter
  • 1 c. fresh mushroom slices
  • 1 pt. half & half
  • 3 tbsp. flour
  • Dash of liquid crab boil
  • 2 c. crawfish tails or shrimp or 1 lb. crabmeat

INSTRUCTIONS
Saute onions and mushrooms in butter until tender. Stir in flour until smooth, but do not brown. Fold in seafood and heat. Add half & half and simmer, stirring until thick. Add dash of crab boil and salt to taste. Serve over grilled tuna steaks or grilled rib eyes. The fresh tuna steak recipe is ready ! Enjoy the party !
