GRILLED TUNA AND ROASTED PEPPER SAUCE
 ...a nice fresh tuna steak recipe to try !

INGREDIENTS
  • (4)- 8 ounce tuna steaks
  • 2 large eggplants
  • 8 tomatoes
  • 3 red bell peppers
  • 6 tablespoons olive oil
  • 1 large onion, chopped
  • 2 tablespoons fresh basil, chopped (may subst. dried) Reserve a few leaves for garnish.
  • 2 tablespoons fresh garlic, chopped
  • 2 tablespoons red wine vinegar

EGGPLANT MARMALADE:

Firt of all put the eggplant into a hot oven (450*) and roast until their skins are completely soft, about one hour. Scrape out the pulp and reserve. In a thick saucepan, saute' 1/3 of the onion in 1/3 of the
oil, then add the eggplant. Cook on a low heat until most of the moisture has evaporated. Season with salt and pepper and set aside.

TOMATO MARMALADE:

Peel the tomatoes by first plunging them into boiling water for 10 seconds. Cut them in half and remove the seeds. Cut into small cubes. In a heavy pot, saute' 1/3 of the onion in 1/3 of the oil.
Add the garlic and tomatoes; cook on low heat until most of the moisture has evaporated. Add the basil and season with salt and pepper. Set aside.

ROASTED RED PEPPER SAUCE:

First of all put the peppers on a hot grill (or under the broiler) Blacken on all sides. Remove the charred skins under running water. Remove seeds, and cut pepper into cubes. Saute' the remaining onion in the remaining oil. Add the red pepper and cook a few minutes. And then put mixture into a blender or food processor. Add remaining olive oil, vinegar and salt and pepper to taste. Blend until smooth.
TUNA STEAKS: Season the tuna with salt and pepper and cook on a very hot grill to personal preference, about 5 minutes per side.

TO ASSEMBLE: Put some of each of the marmalades on plates and top with a steak. Serve with the Roasted Red Pepper sauce. Garnish with basil leaves. The fresh tuna steak recipe is ready to serve....great taste !

GRILLED TUNA WITH ORANGE BUTTER

FRESH TUNA STEAK INGREDIENTS
  • 6 tbsp. (3/4 stick) unsalted butter, room temperature
  • Zest and juice of 1 orange
  • 1 tbsp. parsley or savory, chopped (fresh, if available)
  • 1 1/2 lbs. fresh tuna, cut into 3/4 inch thick steaks

FRESH TUNA STEAK INSTRUCTIONS
First of all in a small bowl, beat the softened butter with the orange zest. Beating constantly, slowly add the orange juice. Stir in the parsley or savory and set aside. Place the tuna on a grill over hot coals. Spray grill with vegetable oil to prevent sticking. Grill 5 minutes on each side or to desired degree of doneness, brushing with some of the orange butter while grilling. Remove the steaks from the grill and season to taste. Serve hot with remaining orange butter and the wedges. Serves 4.

FRESH TUNA STEAK INGREDIENTS
  • 4 fresh tuna steaks or fillets
  • Salt & pepper
  • 1/2 c. mayonnaise
  • 1 tsp. herb seasoning
  • 1 tsp. lemon juice
  • 1/2 c. diced onions
FRESH TUNA STEAK INSTRUCTIONS
First of all In small bowl, mix mayonnaise, herb seasoning and lemon juice. And then Line broiler pan with foil. Place fillets or fresh tuna steaks in pan. Salt and pepper to taste. Next is to Spread top of each fillet or steak with mayonnaise mixture. And then Cover with diced onions. Broil until golden brown. Fish will flake with fork if done. Do not overcook. GRILLED GINGER-SOY TUNA FISH STEAKS
INGREDIENTS
  • 6 (1" thick) fresh fish steaks, such as halibut, salmon, tuna or swordfish
  • 4 garlic cloves, crushed
  • 3 tbsp. soy sauce
  • 1 tbsp. rice wine vinegar or dry sherry
  • 3 tbsp. vegetable oil
  • 2 tbsp. sugar
  • 2 tbsp. minced fresh ginger
INSTRUCTIONS
Place the fish in a glass or ceramic bowl. Mix marinade ingredients and pour over the fresh tuna fish. Marinate, covered for 2 hours.

Arrange coals to one side of grill and light. When coals are covered with gray ash, oil the grill rack to prevent sticking. Place the fresh tuna fish steaks on the lower temperature side of the grill. Cook 4 minutes on each side, brushing with the remaining marinade. To test for doneness, press thumb on fresh tuna fish steak. It should be firm, not give (undercooked), and not hard to the touch (overcooked). Discard the remaining marinade. The fresh tuna steak recipe is ready to serves 6 persons....nice ! Enjoy the steak !

GRILLED FRESH TUNA BALSAMICO

Fresh Tuna Steak Recipe INGREDIENTS
  • 1/3 c. Balsamic vinegar
  • 1/3 c. olive oil
  • 1/4 c. parsley, minced
  • 2 garlic cloves, crushed
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper, freshly ground
  • 4 fresh tuna steaks, 3/4 inch thick
  • 1 red bell pepper, cut in strips
  • 1 yellow bell pepper, cut in strips
  • 1/2 red onion, cubed
Fresh Tuna Steak Recipe INSTRUCTIONS
Whisk together vinegar, oil, parsley, garlic, salt and pepper to form marinade. Place fresh tuna steaks in a suitable container for marinating and pour marinade over tuna. Cover and refrigerate for 2-4 hours. Turn fresh tuna steaks occasionally.

Prepare grill or broiler. Saute pepper strips and onion in 1 tablespoon olive oil and 1 tablespoon marinade until tender. Set aside.

Grill fresh tuna steaks for 2 minutes on each side while basting with the marinade. Fresh Tuna steak should flake apart and be gray-ish in color all the way through. Place fresh tuna steaks on serving plates and garnish with onion and pepper strips. The fresh tuna steak recipe balsamico is ready to serve...enjoy it !

GRILLED TUNA SANTA FE
.....a great tuna steak recipe to try ! Nice !

INGREDIENTS
  • 1/2 c. fresh lime juice
  • 1/2 c. beer
  • 4 tsp. cumin
  • 1/2 tsp. salt
  • Fresh tuna fillets or steaks for each person
  • Sliced avocado, salsa (optional)
  • 4 cloves garlic, minced
  • 3 tbsp. oil
  • 4 tsp. Dijon mustard

INSTRUCTIONS
Combine lime juice, beer, oil, cumin, mustard, salt and garlic in a large shallow dish. Marinate for 2 hours, turning occasionally. Grill on preheated BBQ, approximately 5 minutes each side. Serve
with salsa and a slice of avocado, if desired. The fresh tuna steak recipe is ready to serve....hmmm...amazing ! Enjoy it

GRILLED TUNA NICOISE

GRILLED TUNA NICOISE ..an amazing fresh tuna steak recipe to try ....a great one !

INGREDIENTS
TUNA & MARINADE:
  • 4 fresh tuna steaks (about 4 oz. each), 1 inch thick
  • 1/4 c. extra virgin olive oil
  • 2 tbsp. red wine vinegar
  • 2 tbsp. chopped fresh rosemary
  • 1 tbsp. minced garlic
  • 1/4 tsp. coarsely ground black pepper
  • Salt to taste
GARNISH:
  • 1 tbsp. chopped parsley
  • 1/8 c. black nicoise olives

INSTRUCTIONS
Mix tuna-marinade ingredients in a bowl. Place tuna steaks in one layer in a shallow glass dish; coat with the marinade. Refrigerate, covered, for 1 hour, turning fish twice. Grease grill with cooking spray. Remove tuna from marinade, scraping of bits that cling; place in center of grill over medium-hot coals.
Grill for 10 minutes, turning tuna only once during cooking. Fish should be slightly pink inside. Arrange fish on a platter and serve with your favorite green-bean salad. Sprinkle fish with olives and parsley. The fresh tuna steak recipe of nicoise is ready to serve...hmmm....great taste ! Enjoy it !
